October was insane! And now we've moved into hectic November, and all-too-quickly, December. And so has begun my favorite season of them all - baking season! What? You didn't know that was an official season? Well! Let me enlighten you.

Recently I posted a picture of some pies that I made, and I got quite a few questions...
"Why are these pies so expensive?" I was asked. What you see here are nine 4" pies. So you're expecting to pay about $5. I sold 6 of these pies, traded two, and gave one to a friend. I bet you're still wondering why people pay so much for the pies.
Pictures are incredibly deceiving. Yes, the pie pan was 4 inches. It was also 3 inches deep. When the pies were completed, they were a total of 4 1/2 inches high. (Some 5 inches high, all filled with apples, because I make the pies do the filling does not compress) These pies that you see contained as many apples as the standard 8" pie - that is 4-5 apples.
Homemade pies vs. store pies. (hands vs machines)
I should start this off by explaining about my pies. When I was a freshman (first year student) in high school, I took a culinary arts class, and discovered that I loved the challenge of baking pies. It's a lot harder than it looks - the term "easy as pie!"....just throw that down the toilet! I decided that I wanted to make perfect pies. That was 11 years ago - and now I can say that I'm finally there. It's an expensive hobby - my apple pies (9 inch) can cost $50 to make if I have to purchase all of the materials.
I do not use any sort of mixers for my pies. Everything is done completely by hand - mixing, rolling, everything. Although due to carpal tunnel and tendinitis, I've had to get an apple peeler/corer/parer, but before I had that puppy, I peeled, cut and sliced every apple for my pies. (A job that I would have to set aside an entire day for!) I certainly would not have been able to make 9 pies the other day without that blessed little hand-crank machine!
Store bought pies
The pies that you can go to the store and pick up for $7.99 are made in bulk, using giant mixers, and pastry rollers/cutters that - when the dough is loaded - will precisely roll out the dough in a long sheet, so that it can be cut with a giant cookie cutter-like device into the precise shape needed for the pie. Yay....
My pies -
I use several different types of apples in my pies to ensure that there is a variety of textures and flavors. There is nothing uniform about these apples - I hardly ever use the same ones - but the medley is always superb. (But expensive!!)
Are you still wondering why people would pay $10 for a 4" pie?
I live close to the famous Apple Hill ranches of California. Their pies go between $15-25 per pie, selling at $4 a slice. People were getting a deal down here, and they knew it.
If I could afford to go to culinary school, I certainly would....it would be nice to own a bakery some day.
